Confession: I have a mild obsession with pumpkin, but to be transparent it's not all about the taste. Yes, pumpkin tastes decent on its own. You can eat it right out of the can...
But when you add pumpkin to a recipe, it comes to life like Cinderella's carriage!
Adding pumpkin to applesauce, nut butters, pasta sauce, and so much more provides a nutritious twist on favorite foods.
Today I will share with you a simple pumpkin recipe high in Vitamin A for your eyes, Vitamin C for your immunity, and calcium for your bones! Enjoy sipping this seasonal favorite.
Ingredients
2/3 cups 100% pure pumpkin
2/3 cups vanilla oatmilk or almondmilk
1/3 cup orange juice
1/3 banana
2 tsp brown sugar
1/4 tsp cinnamon
1/2 tsp ground ginger
cinnamon stick, whipped cream,
and oats for garnish (optional)
Step 1: Blend all ingredients
Add all ingredients to blender and pulse a few times before blending.
Step 2: Sip and enjoy your pumpkin-C smoothie!
Pour your smoothie into a glass where you can see its vibrant light-orange color. Garnish if desired. Enjoy!
